This cold brew blend, Sourced Arabica from Rudragiri Estate and Robusta from Udaygiri Estate, both at a commanding 4,500ft — already a full-bodied, viscous blend before the cold brew even begins its work. 16–18 hours later, it's something close to coffee at its most patient. Dark Island pulls you under — and you'll want to stay there. We steep this one slow: 16 to 18 hours in cold water, no heat, no rushing. Most of the bitterness that haunts a bad cold brew is gone by then — long, cold extraction simply doesn't pull out the harsh acids the way hot water does. What's left after steeping is something else entirely: dark cocoa and toffee, deepened and rounded by the time, with a long, smoky finish that only shows up this late in the brew.
